Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy (about 3 minutes).
  4. Add eggs one at a time, beating well after each. Mix in vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture on low speed or with a spatula. Mix just until combined.
  6. Fold in chocolate chips (and nuts or oat flour, if using).
  7. Cover and chill the dough in the fridge for at least 20 minutes.
  8. Use a cookie scoop or tablespoon to drop dough onto prepared baking sheets, spacing about 2 inches apart.
