Instructions

  1. Peel and slice 6-8 large peaches (about 2 lbs). If using frozen, thaw and drain well. If using canned, drain and pat dry. Place slices in a large mixing bowl.
  2. Sprinkle peaches with 1/2 cup granulated sugar, 2 tbsp brown sugar, 1 tbsp cornstarch, 1 tsp cinnamon, 1/4 tsp nutmeg, and 1 tbsp lemon juice. Toss gently to coat. Let sit for 10-15 minutes until juices release.
  3. Preheat oven to 375Β°F (190Β°C). Grease a 9×13-inch baking dish lightly with butter or oil.
  4. In a medium bowl, whisk together 1 cup flour, 1/2 cup sugar, 1/2 tsp baking powder, 1/4 tsp baking soda, and 1/2 tsp salt. Pour in 1/2 cup melted butter, 2/3 cup milk, and 1 tsp vanilla extract. Stir until just combined.
