  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips (semi-sweet or milk chocolate)
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a separate bowl, beat the softened butter with granulated sugar and brown sugar until light and fluffy (about 2 minutes).
  4. Mix in the eggs one at a time, followed by the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Don’t overmix.
  6. Stir in the chocolate chips gently to distribute evenly.
  7. Scoop out dough balls using a cookie scoop or tablespoon. Place them 2 inches apart on the prepared baking sheet.
  8. Press 3-4 mini marshmallows onto the top of each cookie dough ball.
  9. Bake for 10-12 minutes, or until the cookies are set around the edges. Watch closely to avoid overbaking.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Chill the dough for 30 minutes if it feels sticky to help the cookies hold their shape. Use a mix of semi-sweet, dark, and milk chocolate chips for a dynamic flavor profile.
