  • 1/2 cup freshly grated parmesan cheese
  • 1/2 cup panko breadcrumbs (or gluten-free breadcrumbs)
  • 2 eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness (about ½ inch).
  3. Season the chicken with salt, pepper, and garlic powder on both sides.
  4. Set up your dredging station: In one bowl, beat the eggs. In another, mix the parmesan, breadcrumbs, and Italian seasoning.
  5. Dip each chicken breast into the egg mixture, ensuring it’s fully coated, then press it into the breadcrumb mixture. Pat gently to make sure the coating sticks well.
  6. Spray the air fryer basket lightly with olive oil. Place the chicken breasts in a single layer (don’t overcrowd—work in batches if needed).
  7. Spray the tops of the chicken lightly with olive oil.
  8. Cook the chicken in the air fryer for 10-12 minutes, flipping halfway through, until golden brown and the internal temperature reaches 165°F (74°C).
  9. Remove the chicken and let it rest for a few minutes before serving.
