  • 1/4 cup unsalted butter, melted
  • 2 tablespoons granulated sugar

  • 16 ounces cream cheese, room temperature
  • 1/2 cup sour cream
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 2 medium apples, peeled and diced (about 1 1/2 cups)
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon lemon juice
  • 1/2 cup all-purpose flour
  • 1/3 cup rolled oats
  • 1/3 cup brown sugar
  • 1/4 cup unsalted butter, cold and diced
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line the base with parchment paper.
  2. Mix graham cracker crumbs, granulated sugar, melted butter, and cinnamon in a bowl. Press mixture firmly into the bottom of the pan. Bake for 10 minutes, then set aside to cool.
  3. Peel and dice apples. Toss with brown sugar, cinnamon, and lemon juice. Let sit for 10 minutes, then spread evenly over the cooled crust.
  4. In a large bowl, beat cream cheese until smooth (about 2 minutes). Add granulated sugar, sour cream, eggs, vanilla, and lemon juice. Beat until just combined.
  5. Pour cheesecake filling over the apple layer and smooth the top.
  6. In a bowl, combine flour, oats, brown sugar, cold diced butter, cinnamon, and salt. Blend with fingers or pastry cutter until crumbly.
  7. Scatter crumble evenly over the cheesecake filling.
  8. Place pan on a baking sheet and bake for 45-55 minutes, until edges are set and center is slightly wobbly. Cover loosely with foil if crumble browns too quickly.
  9. Remove from oven and cool in the pan for 1 hour. Run a knife around the edge to loosen.
  10. Chill in the fridge for at least 4 hours (overnight is best).
  11. Release springform pan and slice. Serve chilled or at room temperature. Optional: drizzle with caramel sauce.

For best results, use room temperature ingredients and avoid overmixing the filling. If apples release excess juice, drain before layering. Chill thoroughly before slicing for clean edges.
