Warm, spiced apples wrapped in a sugary, crispy taco shell – a fun and unique twist on classic apple pie, perfect for fall parties or cozy nights in.

  • 4 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp)
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • 8 small flour tortillas
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • Whipped cream (optional)
  • Caramel sauce (optional)
  • Vanilla ice cream (optional)

Instructions

  1. Peel, core, and dice the apples into small chunks. Add them to a saucepan along with the granulated sugar, brown sugar, cinnamon, nutmeg, cornstarch, and water. Stir everything together and cook over medium heat until the apples are soft and the mixture has thickened, about 8-10 minutes. Stir in the vanilla extract and set aside to cool.
  2. In a small mixing bowl, combine the granulated sugar and cinnamon to make the cinnamon-sugar blend. Set aside for coating the taco shells.
  3. Brush both sides of the flour tortillas with melted butter. Sprinkle each side generously with the cinnamon-sugar mixture.
  4. Heat your non-stick skillet over medium heat. Using tongs, fold each tortilla in half and hold it in the pan to fry for about 30 seconds on each side. This will form the taco shape and crisp up the shell. Repeat for all tortillas and set them on a plate lined with paper towels to cool slightly.
  5. Once the taco shells have cooled enough to handle, spoon the apple pie filling into each shell. Don’t overfill – you want the filling to stay neatly inside.
  6. If desired, drizzle caramel sauce over the tacos, dollop some whipped cream, or add a scoop of vanilla ice cream on the side.
