  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Cook the bacon in a large soup pot over medium heat until crispy. Remove and place on a paper towel-lined plate to drain. Crumble once cooled.
  2. In the same pot, melt the butter over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for 1 minute.
  3. Sprinkle the flour over the onion and garlic mixture. Whisk continuously for 1-2 minutes to create a roux.
  4. Slowly pour in the chicken broth while whisking to avoid lumps. Bring to a simmer.
  5. Add the gnocchi and let cook for 5-7 minutes, or until tender.
  6. Reduce the heat to low and stir in the heavy cream and shredded cheddar cheese. Mix until the cheese has melted and the soup is creamy.
  7. Season with salt and pepper to taste. Stir in the crumbled bacon, reserving some for garnish.
  8. Ladle the soup into bowls, garnish with parsley if desired, and serve warm.
