  • 2 cups (300g) shredded cooked chicken (rotisserie chicken recommended)
  • 8 ounces (225g) cream cheese, softened
  • ½ cup (120ml) buffalo hot sauce (e.g., Frank’s RedHot)
  • ½ cup (75g) blue cheese crumbles
  • ½ cup (120ml) sour cream
  • 1 cup (100g) shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp salt, or to taste
  • Freshly ground black pepper, to taste
  • Optional garnish: sliced green onions or extra blue cheese crumbles

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. If not already shredded, shred about 2 cups (300g) of cooked chicken using forks or your hands.
  3. In a medium bowl, soften the cream cheese using a spatula or hand mixer for 1-2 minutes until creamy and smooth.
  4. Add the sour cream (½ cup / 120ml) and buffalo hot sauce (½ cup / 120ml); stir well to combine.
  5. Fold in the shredded chicken, ensuring every piece is coated evenly.
  6. Add garlic powder, onion powder, salt, and black pepper; stir thoroughly and adjust seasoning if needed.
  7. Gently fold in ½ cup (75g) of blue cheese crumbles, distributing without breaking them up too much.
  8. Transfer the mixture to an 8×8-inch (20×20 cm) baking dish and spread evenly.
  9. Sprinkle 1 cup (100g) shredded cheddar cheese evenly on top.
  10. Bake in the preheated oven for 20-25 minutes until edges bubble and top is lightly browned.
  11. Remove from oven and let cool for 5 minutes to set slightly.
  12. Garnish with extra blue cheese crumbles or sliced green onions and serve warm with chips, celery sticks, or preferred dippers.

Notes

Soften cream cheese well to avoid lumps. Use rotisserie chicken for convenience and flavor. Adjust buffalo sauce to control heat. Avoid overbaking to keep dip bubbly and moist. Let dip rest after baking for easier scooping. For chunkier texture, reserve some blue cheese crumbles for topping after baking.
