  • 4 medium apples (Granny Smith and Honeycrisp), peeled, cored, and diced
  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg (optional)
  • 1 tbsp lemon juice
  • 2 tbsp unsalted butter, cut into small pieces
  • 1/2 cup unsalted butter
  • 3/4 cup packed light brown sugar
  • 1/4 cup heavy cream (or half-and-half)
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 can (about 12 oz) refrigerated cinnamon rolls (8 count, with icing) or 8 homemade cinnamon rolls, unbaked
  • Vanilla ice cream, for serving

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Peel, core, and dice apples into 1/2-inch pieces. Toss in a large bowl with sugar, cinnamon, nutmeg, and lemon juice. Stir until coated and let sit for 5 minutes.
  3. In a medium saucepan, melt 1/2 cup butter over medium heat. Add brown sugar and stir until dissolved (about 2 minutes). Pour in heavy cream and salt, whisking constantly. Once bubbling, remove from heat and stir in vanilla extract.
  4. Spread apple mixture evenly in the prepared baking dish. Dot with 2 tbsp butter pieces over the apples.
  5. Pour warm caramel sauce evenly over the apples. Gently shake the pan to help it settle.
  6. Separate cinnamon rolls and arrange evenly on top of the apple-caramel mixture, leaving space between rolls.
  7. Bake uncovered for 30-35 minutes, until cinnamon rolls are golden and cooked through and caramel is bubbling. If rolls brown too quickly, cover loosely with foil after 20 minutes.
  8. Remove from oven and let cool for 10 minutes. Drizzle included icing (or homemade glaze) over warm rolls.
  9. Serve warm in bowls, topped with vanilla ice cream.

Notes

Mix tart and sweet apples for best flavor. For gluten-free, use gluten-free cinnamon rolls and oat or almond flour in the filling. If caramel is thin, bake a few extra minutes; if rolls brown too fast, cover with foil. Place a baking sheet under the dish to catch any caramel overflow. Store leftovers in the fridge for up to 3 days or freeze for up to 2 months.
