  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg (optional)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1/2 cup sour cream (or Greek yogurt)
  • 1/4 cup whole milk (or almond/oat milk)
  • 1 tsp pure vanilla extract
  • 1 1/2 cups tart apples, peeled and diced small (Granny Smith recommended)
  • 1/2 cup caramel sauce (store-bought or homemade)
  • For the Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/3 cup packed brown sugar
  • 1 tsp ground cinnamon
  • 1/4 cup unsalted butter, cold and diced
  • 1/4 cup rolled oats (optional)
  • Pinch of salt
  • For the Glaze (Optional):
  • 3 tbsp caramel sauce (for drizzling)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. Dice apples into small, even cubes.
  3. Make the streusel: In a medium bowl, combine 1/2 cup flour, 1/3 cup brown sugar, 1 tsp cinnamon, pinch of salt, and rolled oats. Add cold, diced butter and rub in until coarse crumbs form. Chill in fridge.
  4. In a large bowl, whisk together 2 cups flour, 1 1/2 tsp cinnamon, 1/2 tsp nutmeg, 1 tsp baking powder, 1/2 tsp baking soda, and 1/4 tsp salt.
  5. In another large bowl, beat 1/2 cup softened butter and 3/4 cup sugar until light and fluffy (2-3 minutes).
  6. Beat in eggs one at a time. Stir in sour cream, milk, and vanilla extract.
  7. Add dry ingredients to wet in two batches, mixing gently after each addition. Do not overmix.
  8. Fold in diced apples.
  9. Pour half the batter into the pan, drizzle half the caramel sauce over, add remaining batter, then drizzle rest of caramel. Swirl lightly with a knife.
  10. Sprinkle chilled streusel evenly over the top. Press gently.
  11. Bake for 55–65 minutes, or until a toothpick comes out mostly clean. Tent with foil if streusel browns too quickly.
  12. Cool bread in pan for 10 minutes, then transfer to wire rack. Drizzle with extra caramel sauce if desired. Cool completely before slicing.

Notes

Chill streusel before topping for extra crunch. Dice apples small for even baking. Don’t overmix batter. If apples are juicy, toss in a tablespoon of flour before folding in. For nut allergies, omit nuts from streusel. Bread can be made gluten-free or vegan with substitutions.
