  • 1 pound beef sirloin or steak tips, thinly sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced thin
  • 2 cloves garlic, minced
  • 6 slices provolone cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup beef broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the tortellini according to package instructions, drain, and set aside.
  3. Heat olive oil in a large skillet over medium-high heat. Add the onions and bell peppers, cooking for 5-7 minutes until softened. Stir in garlic and cook for another minute. Remove from skillet and set aside.
  4. In the same skillet, add a bit more olive oil if needed. Sauté the thinly sliced beef until browned, about 3-4 minutes. Season with salt and pepper.
  5. In a large bowl, mix the cooked tortellini, sautéed veggies, beef, and beef broth. Stir to coat everything evenly.
  6. Transfer the mixture to a greased 9×13-inch baking dish. Layer provolone slices on top, followed by shredded mozzarella.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and golden brown.
  8. Sprinkle with fresh parsley if desired, and let the casserole rest for 5 minutes before serving.

Thinly slice the steak for tender bites and avoid overcrowding the skillet to ensure proper caramelization. Use fresh tortellini for the best texture, and layer cheese strategically for maximum flavor.
