Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a large bowl, whisk together the all-purpose flour, baking soda, and salt until evenly distributed.
  3. In another bowl, whisk the melted coconut oil (warm, not hot), brown sugar, granulated sugar, and vanilla extract until smooth.
  4. Add eggs one at a time to the wet mixture, whisking well after each addition until glossy and slightly thickened.
  5. Gradually add the dry flour mixture to the wet ingredients, stirring gently with a spatula or wooden spoon until just combined. Do not overmix.
  6. Fold in the chocolate chips evenly throughout the dough.
  7. Using a cookie scoop or tablespoon, drop heaping spoonfuls of dough onto the prepared baking sheets, spacing about 2 inches apart.
