  • 6 cups (160g) Rice Krispies cereal
  • 10 ounces (283g) mini marshmallows
  • 6 tablespoons (85g) unsalted butter
  • 1 cup (80g) shredded coconut (sweetened or unsweetened)
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of salt
  • Optional: Chocolate chips, sprinkles, dried fruit

Instructions

  1. Lightly grease a 9×13-inch pan with non-stick spray or line it with parchment paper.
  2. In a large saucepan over medium heat, melt 6 tablespoons (85g) of unsalted butter until fully liquefied.
  3. Stir in 10 ounces (283g) of mini marshmallows and continue stirring until completely melted and smooth, about 3-4 minutes.
  4. Remove the saucepan from heat and quickly stir in 1 teaspoon (5ml) of vanilla extract and a pinch of salt.
  5. Add 1 cup (80g) of shredded coconut to the melted marshmallow mixture and stir until evenly combined.
  6. Gradually fold in 6 cups (160g) of Rice Krispies cereal, mixing thoroughly to coat every piece with the marshmallow mixture.
  7. Transfer the mixture to the prepared pan and use wax paper or a lightly greased spatula to press it down evenly.
  8. Let the treats cool at room temperature for about 30 minutes before cutting into squares.
