A quick and festive twist on classic Rice Krispie treats using colorful Peeps marshmallow candies for a fun and cheerful snack.

  • 6 cups Rice Krispies cereal (about 165g)
  • 3 tablespoons unsalted butter (about 42g), softened
  • 4 cups mini marshmallows (about 120g)
  • 1 bag of Peeps marshmallow chicks or bunnies (about 810 Peeps), assorted colors
  • 1/2 teaspoon vanilla extract (optional)
  • Sprinkles or edible glitter to top (optional)

Instructions

  1. Lightly grease a 9×13-inch baking pan with butter or non-stick spray, or line it with parchment paper. Set aside.
  2. In a large heavy-bottomed saucepan over low heat, melt 3 tablespoons of unsalted butter, watching closely to avoid browning or burning.
  3. Add 4 cups of mini marshmallows to the melted butter. Stir continuously with a wooden spoon or heat-resistant spatula until fully melted and smooth, about 5-7 minutes.
  4. Tear the Peeps into smaller pieces (quarters) and add them to the melted marshmallow mixture. Stir gently until they start melting and blend in, creating colorful swirls, about 2-3 minutes.
  5. If using, stir in 1/2 teaspoon of vanilla extract to lift the flavor, about 30 seconds.
  6. Remove the saucepan from heat. Immediately add 6 cups of Rice Krispies cereal to the marshmallow mixture. Stir quickly but gently until the cereal is well coated, about 2 minutes.
  7. Pour the mixture into the prepared pan. Using a buttered spatula or wax paper, press the mixture evenly into the pan without compacting too hard, about 5 minutes.
  8. Let the treats cool at room temperature for at least 30 minutes before cutting to allow them to firm up but stay soft and gooey.
  9. Use a sharp knife warmed under hot water and wiped dry to cut into squares or fun shapes. Serve and enjoy.

Notes

Melt butter and marshmallows on low heat to avoid burning. Tear Peeps into small pieces for even melting and colorful swirls. Press mixture gently to keep treats light and chewy. Warm knife before cutting for clean edges. Microwave mixture for 15 seconds if too stiff.
