  • 6 cups (150 grams) Rice Krispies cereal
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Lightly grease a 9×13-inch baking pan with butter or cooking spray and set aside.
  2. In a large saucepan over medium-low heat, melt 4 tablespoons (57 grams) of unsalted butter, being careful not to brown it.
  3. Add 10-12 Peeps marshmallows to the melted butter and stir constantly with a rubber spatula or wooden spoon until melted and glossy, about 3-5 minutes.
  4. Remove the saucepan from heat and stir in 1 teaspoon of vanilla extract, if using.
  5. Immediately add 6 cups (150 grams) of Rice Krispies cereal to the melted Peeps mixture and gently fold until evenly coated, taking care not to crush the cereal.
  6. Pour the mixture into the greased pan and press firmly but gently with a buttered spatula or lightly buttered hands to maintain a light, airy texture.
  7. Let the treats cool at room temperature for about 30 minutes until set but still soft and gooey.
  8. Cut into squares or fun shapes with a sharp knife and serve immediately or store as desired.

Notes

Use fresh Peeps for best melting and color. For dairy-free versions, substitute butter with coconut oil and use dairy-free cereal. Press treats while warm for best texture. Avoid high heat to prevent burning the marshmallows. Optional: add rainbow sprinkles or drizzle melted chocolate after cooling.
