  • 8 slices thick-cut bacon, cooked crisp and chopped
  • 2 cups shredded sharp cheddar cheese
  • 1 packet (about 1 ounce) ranch seasoning mix
  • 8 ounces cream cheese, softened
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 34 green onions, sliced thin
  • 1 teaspoon garlic powder (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook 8 slices of thick-cut bacon in a medium skillet over medium heat until crisp, about 8-10 minutes. Drain on paper towels and chop into bite-sized pieces. Reserve a tablespoon of bacon for topping.
  3. In a medium bowl, combine softened cream cheese, sour cream, mayonnaise, ranch seasoning, and garlic powder if using. Blend with a fork or whisk until smooth and creamy. Microwave for 15-20 seconds if cream cheese is too stiff.
  4. In a large bowl, mix shredded chicken, chopped bacon (reserve some for topping), shredded cheddar cheese (reserve ½ cup for topping), and sliced green onions.
  5. Pour the creamy ranch mixture over the chicken mixture and stir gently until evenly coated.
  6. Spread the mixture evenly in a greased 9×13 inch casserole dish. Sprinkle reserved cheese and bacon bits on top.
  7. Bake uncovered for 25-30 minutes until cheese is melted, bubbly, and lightly browned. Check doneness by ensuring edges are bubbling and center is hot.
  8. Let the casserole rest for about 5 minutes before serving.
