  • 1 cup cottage cheese (full-fat or low-fat)
  • 1/2 cup chocolate protein powder
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 cup rolled oats or quick oats
  • 1/4 cup almond butter
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup dark chocolate chips (optional)
  • Pinch of salt

Instructions

  1. Add the cottage cheese, cocoa powder, and chocolate protein powder to a food processor or blender. Blend until smooth, about 1-2 minutes.
  2. Toss in the oats and a pinch of salt, then blend again until the mixture comes together and has a thick, slightly sticky consistency.
  3. Add almond butter, maple syrup, and vanilla extract. Blend for another minute until fully combined. Scrape down the sides as needed.
  4. If the mixture is too wet, add a tablespoon of oats at a time until it reaches a manageable consistency. If it’s too dry, add a teaspoon of almond butter.
  5. Fold in dark chocolate chips (if using) for bursts of chocolatey goodness.
  6. Use a cookie scoop or tablespoon to portion the mixture. Roll into balls and place on a lined plate or tray.
  7. Refrigerate the bites for at least 30 minutes to firm up. Store in an airtight container.

Notes

Avoid watery cottage cheese for the best texture. Chill the mixture if it feels too soft before shaping. Customize sweetness and ingredients to fit your dietary needs.
