Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish with butter or nonstick spray.
  2. Brown the butter in a medium saucepan over medium heat, stirring frequently until it foams and turns golden brown with a nutty aroma (about 4-5 minutes). Remove from heat immediately and set aside.
  3. Peel and slice peaches. Toss them with 1/2 cup brown sugar, 1/4 cup granulated sugar, and 1 tablespoon lemon juice in a bowl. Let sit while preparing batter.
  4. In a bowl, whisk together 1 cup flour, baking powder, and 1/2 teaspoon salt. Slowly pour in the browned butter and 1/2 cup milk, stirring gently until just combined. Batter will be thick but pourable.
  5. Pour batter evenly into the prepared baking dish. Spoon peach mixture evenly over the batter, including juices.
  6. In a small bowl, mix rolled oats, 1/3 cup brown sugar, 1/3 cup flour, cinnamon, and a pinch of salt. Drizzle melted butter over and stir until mixture clumps slightly.
  7. Sprinkle the oat crumble topping evenly over the peaches and batter.
  8. Bake for 40–45 minutes or until topping is golden brown and peach juices bubble at edges. A toothpick inserted should come out clean or with moist crumbs.
  9. Let cobbler cool for about 10 minutes before serving to thicken and make scooping easier.

Notes

Use a light-colored pan to brown butter to monitor color and avoid burning. If peaches are very juicy, drain excess liquid to prevent soggy cobbler. Do not overmix batter to keep topping tender. Cover with foil if crumble browns too fast during baking. Let cobbler cool before serving for best texture.
