  • ¾ cup (150 g) granulated sugar
  • ¼ cup (50 g) packed brown sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 2 tbsp cinnamon (divided between batter and sugar swirl)
  • 2 tbsp vegetable oil
  • Cinnamon sugar mixture: ½ cup granulated sugar mixed with 1 tbsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together 1 ½ cups all-purpose flour, 1 tsp baking soda, ½ tsp salt, and 1 tbsp cinnamon. Set aside.
  3. In a medium bowl, beat ½ cup softened unsalted butter, ¾ cup granulated sugar, and ¼ cup packed brown sugar until light and fluffy, about 2 to 3 minutes.
  4. Beat in 2 large eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in 1 tsp vanilla extract.
  5. Stir in 3 medium ripe mashed bananas and 2 tbsp vegetable oil until the batter is smooth and shiny.
  6. Gradually fold the dry ingredients into the wet mixture using a rubber spatula. Mix just until no streaks of flour remain.
  7. Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture evenly over the batter. Pour the remaining batter on top, then sprinkle the rest of the cinnamon sugar mixture. Use a knife or skewer to gently swirl the sugar into the batter, creating a marbled effect without overmixing.
  8. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Tent with foil if the top browns too quickly after 45 minutes.
  9. Remove from oven and let the bread cool in the pan for 10 minutes. Transfer to a cooling rack to cool completely before slicing.
