  • ¼ cup (50g) granulated sugar
  • ⅓ cup (75g) unsalted butter, melted and cooled
  • 1 large egg, room temperature
  • ½ tsp salt
  • ½ cup (100g) brown sugar, packed
  • 2 tbsp ground cinnamon
  • 3 tbsp (43g) unsalted butter, softened
  • 4 oz (115g) cream cheese, softened
  • ¼ cup (30g) powdered sugar
  • 2 tbsp (30ml) milk or heavy cream
  • ½ tsp vanilla extract

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm milk and granulated sugar. Stir gently to dissolve. Sprinkle yeast on top and let sit for 5-7 minutes until foamy.
  2. Make the dough: Add melted butter, egg, and salt to the yeast mixture. Stir to combine. Gradually add flour, about half a cup at a time, mixing until a sticky dough forms.
  3. Knead the dough: Lightly flour a clean surface and knead dough for 6-8 minutes until smooth and elastic. Alternatively, use a stand mixer with dough hook on medium speed for 5-6 minutes.
  4. First rise: Place dough in a greased bowl, cover with kitchen towel or plastic wrap, and let rise in a warm spot for 45-60 minutes until doubled in size.
  5. Prepare the filling: Mix brown sugar and cinnamon in a small bowl. Set aside softened butter separately.
  6. Shape the bread: Punch down dough and roll out on floured surface into a 12×8 inch rectangle. Spread softened butter evenly over dough, then sprinkle cinnamon sugar mixture on top.
  7. Roll and slice: Roll dough tightly from the long side into a log. Slice into 8-10 even pieces about 1 to 1 ½ inches thick.
  8. Arrange in loaf pan: Place slices cut-side up in greased 9×5-inch loaf pan, slightly touching but not squished. Cover and let rise for another 30 minutes until puffy.
  9. Bake: Preheat oven to 350°F (175°C). Bake bread for 30-35 minutes until golden brown and a toothpick inserted comes out clean. Tent with foil if top browns too quickly.
  10. Make the glaze: Whisk together cream cheese, powdered sugar, milk, and vanilla until smooth and pourable. Adjust milk quantity for desired consistency.
  11. Glaze and serve: After bread cools about 10 minutes, drizzle cream cheese glaze generously over top. Serve warm.

Notes

Use warm milk at about 110°F to activate yeast properly. Knead dough well for soft texture. Let dough rise fully for best fluffiness. Slice bread evenly for uniform baking. Wait until bread is warm but not hot before glazing to prevent glaze from sliding off. For vegan or gluten-free versions, substitute ingredients accordingly.
