  • 2 cups butternut squash, peeled, seeded, and diced into small cubes
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper, to taste
  • 1/2 teaspoon ground cinnamon
  • 12 medium-sized crisp apples (Honeycrisp or Gala), diced
  • 4 oz goat cheese, crumbled or spreadable
  • Balsamic glaze, for drizzling
  • 1 loaf baguette, sliced into 1/2-inch rounds and toasted
  • Fresh thyme, optional

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Peel the butternut squash, remove the seeds, and dice it into small cubes (around 1/2 inch). In a mixing bowl, toss the squash with 2 tablespoons of olive oil, 1/2 teaspoon of cinnamon, and a pinch of salt and pepper.
  3. Spread the seasoned squash cubes evenly on the baking sheet and bake for 20-25 minutes, flipping halfway through, until tender and slightly caramelized.
  4. Slice the baguette into 1/2-inch rounds. Arrange them on another baking sheet and drizzle lightly with olive oil. Toast in the oven for 5-7 minutes or until golden brown. Remove and let cool.
  5. Dice the apples into small cubes and set aside.
  6. Spread a thin layer of goat cheese onto each toasted baguette slice. Top with a few pieces of roasted butternut squash and diced apples.
  7. Drizzle each bruschetta with balsamic glaze and sprinkle with fresh thyme leaves (if using).
  8. Arrange the bruschetta on a platter and serve immediately.
