  • 1/2 cup (60 g) whole wheat flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/4 cup (56 g) unsalted butter, softened
  • 1/3 cup (113 g) honey
  • 1/2 cup (120 g) Greek yogurt
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • Optional: toasted sesame seeds or chopped nuts for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together all-purpose flour, whole wheat flour, baking powder, ground cinnamon, ground nutmeg, and salt.
  3. In a separate medium bowl, beat softened unsalted butter with honey until smooth and creamy, about 2-3 minutes.
  4. Beat in the egg, Greek yogurt, and vanilla extract to the honey and butter mixture until combined but not overmixed.
  5. Gradually fold the dry ingredients into the wet mixture using a wooden spoon or spatula until a thick, slightly sticky dough forms.
  6. Turn the dough onto a lightly floured surface and roll out to about 1-inch thickness. Cut into 3×3 inch squares or rectangles.
  7. Optionally brush the tops with honey and sprinkle toasted sesame seeds or chopped nuts.
  8. Arrange the pieces on the prepared baking sheet, leaving space between each. Bake for 18-22 minutes or until golden and a toothpick inserted comes out clean.
  9. Transfer to a cooling rack and let cool completely before serving.

Notes

Use room temperature eggs and yogurt for better mixing. Do not overmix the dough to avoid toughness. Watch oven closely and tent with foil if browning too fast. Store in airtight container for up to 3 days or freeze for up to 3 months.
