Cozy Maple Bourbon Breakfast Skillet for Two

A comforting and flavorful breakfast skillet combining smoky bacon, sweet potatoes, and a maple bourbon glaze, perfect for cozy mornings and easy to prepare.

Ingredients

  • 4 slices thick-cut bacon, chopped
  • 1 medium sweet potato, peeled and diced
  • 1 small onion, thinly sliced
  • 1 red bell pepper, diced
  • 1/4 cup pure maple syrup
  • 2 tablespoons bourbon
  • 1 tablespoon unsalted butter
  • 4 large eggs
  • Salt and freshly ground black pepper, to taste
  • Optional garnishes: chopped fresh parsley or chives, crumbled feta or goat cheese

Instructions

  1. Heat skillet over medium heat. Add chopped bacon and cook 5-7 minutes until crispy. Remove bacon bits with slotted spoon and set aside, leaving rendered fat in skillet.
  2. Add diced sweet potato to bacon fat. Cook about 8 minutes, stirring occasionally until softened and starting to brown.
  3. Add sliced onion and diced red bell pepper. Cook another 5 minutes until onions are translucent and veggies caramelized.
  4. In a small bowl, whisk together maple syrup, bourbon, and butter. Pour sauce over veggies in skillet and stir gently. Cook 2 minutes until sauce thickens and glazes ingredients.
  5. Create four wells in skillet mixture. Crack an egg into each well. Reduce heat to low, cover skillet, and cook 5-7 minutes until egg whites are set and yolks remain runny (or longer for firmer yolks).
  6. Sprinkle crispy bacon bits over skillet. Season with salt and pepper. Add optional garnishes if desired. Serve directly from skillet.

Notes

If sweet potatoes take longer to soften, cover skillet loosely with foil to trap steam. Bourbon aroma mellows after cooking. For dairy-free, substitute butter with coconut oil or omit. Do not stir after adding eggs to allow them to cook in wells.
