  • 2 pounds beef sirloin or stew meat, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups low sodium beef broth
  • 2 tablespoons Worcestershire sauce
  • 1/4 cup all-purpose flour (can substitute with cornstarch for gluten-free)
  • 2 tablespoons unsalted butter, softened
  • Salt and freshly cracked black pepper, to taste
  • 1 teaspoon dried thyme (optional)
  • About 4 cups prepared mashed potatoes (homemade or store-bought)

Instructions

  1. Pat the beef tips dry with paper towels and season generously with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Brown the beef tips in batches, about 2-3 minutes per side, then transfer to the slow cooker.
  3. In the same skillet, sauté chopped onion until translucent, about 3-4 minutes. Add minced garlic and cook for 30 seconds until fragrant. Transfer to the slow cooker over the beef.
  4. In a small bowl, whisk together beef broth, Worcestershire sauce, flour, and softened butter until smooth. Pour over the beef and onions in the slow cooker. Add dried thyme and additional salt and pepper if desired.
  5. Cover and cook on low for 7-8 hours or on high for 3-4 hours until beef is fork-tender and gravy is thick and glossy. If gravy is too thin, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir in. Cook uncovered for 15 minutes to thicken.
  6. Prepare mashed potatoes while the beef cooks. Warm them up just before serving.
  7. Serve beef tips and gravy over mashed potatoes. Garnish with fresh parsley if desired.

Notes

Browning the beef before slow cooking adds depth of flavor. If gravy is too thin, thicken with cornstarch slurry and cook uncovered for 15 minutes. You can substitute flour with cornstarch for gluten-free gravy. Mashed potatoes can be made ahead and reheated. Leftovers store well in the fridge for 3 days or freezer for 3 months.
