Ingredients

Scale
  • 1 pound (450g) fresh green beans, trimmed and blanched
  • 8 slices bacon, diced
  • 3 tablespoons (30g) unsalted butter
  • 3 tablespoons (24g) all-purpose flour
  • 1 cup (240ml) whole milk
  • 1/2 cup (120ml) heavy cream
  • 1/2 cup (120ml) chicken broth
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 cup (120g) shredded cheddar cheese
  • 1/4 cup (25g) grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup (60g) crispy fried onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash and trim 1 pound (450g) of fresh green beans. Bring a large pot of salted water to a boil, add the green beans, and blanch them for 3-4 minutes. Drain and set aside.
  3. Dice 8 slices of bacon and cook them in a sauté pan over medium heat until crispy. Remove the bacon and place it on a plate lined with paper towels to drain.
  4. In the same pan with the bacon drippings, add 1 medium diced onion and 2 minced garlic cloves. Sauté for 3-4 minutes until fragrant and translucent.
  5. Add 3 tablespoons (30g) of butter to the pan and melt. Whisk in 3 tablespoons (24g) of all-purpose flour and cook for 1-2 minutes. Slowly pour in 1 cup (240ml) of milk, 1/2 cup (120ml) of heavy cream, and 1/2 cup (120ml) of chicken broth, whisking constantly until the sauce is smooth and thickened, about 4-5 minutes.
  6. Stir in 1 cup (120g) of shredded cheddar cheese and 1/4 cup (25g) of grated Parmesan. Mix until melted and smooth. Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
  7. In a large mixing bowl, gently toss the blanched green beans with the creamy sauce and crispy bacon. Transfer the mixture into a greased 9×13-inch baking dish.
  8. Sprinkle 1 cup (60g) of crispy fried onions evenly over the top.
  9. Place the casserole in the preheated oven and bake for 20-25 minutes, or until the topping is golden and the sauce is bubbling.
  10. Let the casserole cool for 5 minutes before serving. Enjoy!
