  • 8 oz (225 g) Boursin cheese, garlic and herb flavor
  • 1 cup (240 ml) heavy cream or half-and-half
  • 2 tablespoons unsalted butter
  • 1/2 cup (50 g) grated Parmesan cheese
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon kosher salt
  • 1 cup fresh basil leaves
  • 1/2 cup fresh parsley leaves
  • 1/4 cup fresh chives
  • 2 cloves garlic, minced
  • 1/4 cup (60 ml) extra virgin olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add 12 oz pasta and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup pasta water before draining, then drain pasta and set aside.
  2. While pasta cooks, combine basil, parsley, chives, minced garlic, olive oil, and lemon juice in a blender or food processor. Blend until smooth. Season with salt and pepper to taste. Add water or olive oil if sauce is too thick.
  3. In a large skillet over medium heat, melt butter. Add heavy cream and bring to a gentle simmer for 3-4 minutes. Stir in Boursin cheese chunks until melted and smooth.
  4. Add grated Parmesan cheese, black pepper, and salt to the skillet. Stir to combine. If sauce is too thick, add reserved pasta water a little at a time to loosen.
  5. Add drained pasta to the skillet and toss gently to coat evenly. Cook together for 1-2 minutes until sauce clings to pasta and pasta glistens.
  6. Divide pasta onto plates or serving bowl. Drizzle fresh herb sauce over the top. Optionally garnish with extra Parmesan and fresh herbs.
