A quick and easy creamy buffalo chicken dip perfect for game day parties, combining shredded chicken, cheeses, and buffalo sauce for a spicy, cheesy treat.

Ingredients

Scale
  • 3 cups shredded cooked chicken (about 450g) – rotisserie chicken recommended
  • 8 oz cream cheese, softened (225g)
  • ½ cup buffalo wing sauce (120ml) – Frank’s RedHot recommended
  • ½ cup ranch dressing (120ml)
  • 1 cup shredded sharp cheddar cheese (100g)
  • ½ cup shredded mozzarella cheese (50g)
  • ¼ cup blue cheese crumbles (30g) – optional but recommended
  • 2 stalks green onions, thinly sliced
  • 1 teaspoon garlic powder (5ml)
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, beat the softened cream cheese until smooth and creamy (about 2 minutes with an electric mixer or 5 minutes by hand).
  3. Stir in ½ cup buffalo wing sauce and ½ cup ranch dressing until fully combined.
  4. Add 1 teaspoon garlic powder, salt, and black pepper to taste; mix well.
  5. Fold in 3 cups shredded chicken, 1 cup sharp cheddar, ½ cup mozzarella, and ¼ cup blue cheese crumbles if using.
  6. Spread the mixture evenly in an 8×8-inch baking dish and smooth the top with a spatula.
  7. Bake for 20-25 minutes until bubbly and slightly golden on top.
  8. Remove from oven, sprinkle with sliced green onions, and serve warm with tortilla chips, celery sticks, or crusty bread.

Notes

Soften cream cheese fully before mixing to avoid lumps. Taste and adjust buffalo sauce before baking for desired spice level. Tent with foil if top browns too quickly. Let dip rest 5 minutes after baking to thicken.
