A creamy, spicy buffalo chicken dip with tangy blue cheese that’s perfect for parties and gatherings. This dip combines shredded chicken, buffalo sauce, cream cheese, and cheeses for a rich, flavorful snack.

Ingredients

Scale
  • 3 cups shredded cooked chicken (rotisserie chicken works great)
  • 8 ounces cream cheese, softened (full-fat recommended)
  • 1/2 cup buffalo wing sauce (Frank’s RedHot preferred)
  • 1/2 cup crumbled blue cheese (creamy, tangy variety)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Freshly ground black pepper, to taste
  • Thinly sliced green onions, for garnish (optional)
  • Celery sticks or sturdy chips, for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Beat the cream cheese in a large mixing bowl until smooth and creamy, about 2 minutes.
  3. Add the buffalo wing sauce and sour cream to the cream cheese and mix until combined.
  4. Stir in the shredded chicken, blue cheese crumbles, and shredded cheddar cheese gently until evenly coated.
  5. Season with garlic powder, onion powder, and freshly ground black pepper; mix gently.
  6. Transfer the mixture to a prepared 8×8-inch baking dish, spreading it out evenly with a spatula.
  7. Bake for 20-25 minutes until edges are bubbling and the top is lightly golden. For a crustier top, broil for 1-2 minutes, watching closely.
  8. Remove from oven and let cool slightly for 5 minutes.
  9. Garnish with sliced green onions and serve immediately with celery sticks, sturdy chips, or toasted bread.

Notes

Let cream cheese soften properly before mixing to avoid lumps. Adjust buffalo sauce amount to control heat level. Shred chicken finely for consistent texture. If dip is too thick after baking, stir in a splash of milk or extra sour cream. Leftovers keep well refrigerated for 3-4 days and reheat gently with added sour cream or milk to restore creaminess.
