  • 1 cup (227g) unsalted butter, softened
  • 1/4 cup fresh herbs (parsley, thyme, chives), finely chopped
  • 1 small clove garlic, minced
  • Zest of 1 small lemon
  • 1/4 cup (30g) toasted nuts (walnuts, pecans, or almonds), roughly chopped
  • Flaky sea salt, a pinch or two
  • Freshly ground black pepper, to taste
  • Optional: drizzle of honey
  • Optional: sprinkle of red pepper flakes

Instructions

  1. Remove 1 cup (227g) of unsalted butter from the fridge and let it sit at room temperature for 15-20 minutes until soft but still firm.
  2. Heat a dry skillet over medium heat. Add 1/4 cup (30g) of nuts and toast, stirring frequently, for 3-5 minutes or until golden and fragrant. Transfer to a bowl to cool.
  3. Finely chop about 1/4 cup of fresh herbs (parsley, thyme, chives). Zest one small lemon using a microplane, avoiding the bitter white pith.
  4. In a medium bowl, combine the softened butter, minced garlic, chopped herbs, and lemon zest. Fold everything together gently but thoroughly until creamy and uniform.
  5. Fold in half of the toasted nuts, reserving the rest for topping. Season with freshly ground black pepper and a pinch of flaky sea salt. Taste and adjust seasoning as needed.
  6. Spread the butter mixture onto a butter board or serving platter in a rustic, slightly uneven layer.
  7. Sprinkle the remaining toasted nuts on top, followed by a light dusting of flaky sea salt.
  8. Optionally, drizzle a little honey over the top or sprinkle red pepper flakes for a subtle kick.
  9. Let the butter sit at room temperature for 10 minutes before serving to soften slightly for easy spreading.

Notes

Use unsalted butter for better control of saltiness. Toast nuts carefully to avoid burning. Let the spread sit overnight in the fridge for deeper flavor and bring to room temperature before serving. Vegan butter and maple syrup can be used for a vegan version. Nuts can be swapped for pumpkin or sunflower seeds for a nut-free option.
