A creamy, sweet, and slightly fizzy Butterbeer recipe inspired by Harry Potter, perfect for cozy nights and magical gatherings. This easy homemade drink combines butterscotch, cream soda, and a fluffy whipped topping for a velvety smooth treat.

Ingredients

Scale
  • 1 cup (240 ml) cream soda (chilled)
  • 4 tablespoons (60 ml) butterscotch syrup
  • 2 tablespoons (30 g) unsalted butter, softened
  • 1/2 teaspoon vanilla extract
  • A pinch of ground cinnamon (optional)
  • 1/2 cup (120 ml) heavy whipping cream, cold
  • 2 tablespoons (25 g) powdered sugar
  • 1 tablespoon (15 ml) butterscotch syrup (for topping)
  • A small pinch of salt

Instructions

  1. In a medium saucepan over low heat, combine the softened butter and butterscotch syrup. Stir gently until the butter melts and the mixture is smooth and fragrant, about 3-5 minutes. Do not boil or scorch.
  2. Remove the saucepan from heat and stir in the vanilla extract and a pinch of cinnamon.
  3. Slowly pour the chilled cream soda into the saucepan, stirring gently to combine. Pour slowly to maintain fizz and avoid overflow.
  4. In a large bowl, add the cold heavy cream, powdered sugar, and a pinch of salt. Whip with an electric mixer or whisk until soft peaks form, about 2-3 minutes.
  5. Gently fold in 1 tablespoon of butterscotch syrup into the whipped cream to create swirls without overmixing.
  6. Pour the warm butterscotch cream soda mixture into heatproof mugs, filling about 3/4 full.
  7. Spoon a generous dollop of the creamy topping over each mug. Optionally, drizzle extra butterscotch syrup on top.
  8. Serve immediately, warm or at room temperature.

Notes

Chill the cream soda beforehand for best layering effect. Whip the cream while cold to achieve fluffy peaks. Warm the butterscotch and butter gently to avoid burning. Pour cream soda slowly to keep fizz. The base can be made ahead and reheated, but add cream soda and topping fresh before serving.
