  • 1 can (15 oz) sweet whole kernel corn, drained
  • 1 can (15 oz) creamed corn
  • 2 large eggs, room temperature
  • 1 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 1 cup shredded sharp cheddar cheese (optional)
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/4 cup diced jalapeños or green chilies (optional)
  • 1/4 cup chopped fresh chives (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Lightly grease a 9×13-inch baking dish with butter or nonstick spray.
  3. In a large bowl, whisk together eggs, sour cream, and melted butter until smooth.
  4. Stir in sweet whole kernel corn and creamed corn until evenly combined.
  5. Sprinkle in Jiffy Corn Muffin Mix and fold gently until just combined. Do not overmix.
  6. Add shredded cheddar cheese, salt, and black pepper. Stir in jalapeños or chives if using.
  7. Pour batter into prepared baking dish and smooth the top.
  8. Bake uncovered for 40-50 minutes, checking at 40 minutes. The top should be golden and a toothpick inserted near the center comes out almost clean.
  9. If the top browns too quickly, tent loosely with foil halfway through.
  10. Remove from oven and let rest for 10-15 minutes before slicing and serving.

Notes

For gluten-free, use a certified gluten-free cornbread mix. For dairy-free, substitute vegan butter and coconut yogurt, and omit or replace cheese. Don’t overmix the batter for best texture. Let casserole rest before slicing. Bake uncovered for crisp edges. Store leftovers in the fridge up to 4 days or freeze for up to 2 months.
