Instructions

  1. Prepare the cream cheese filling by beating softened cream cheese with sugar, vanilla extract, and lemon zest (if using) until smooth and creamy. Set aside.
  2. Flatten each bread slice gently using a rolling pin or glass to make it pliable but not torn.
  3. Spread about 2 tablespoons of cream cheese filling evenly over each flattened bread slice, leaving a small border around the edges.
  4. Roll the bread tightly into a cylinder and pinch the edges to seal the filling inside. Set aside.
  5. In a large shallow bowl, whisk together eggs, milk, cinnamon, sugar, vanilla extract, and salt until well combined and slightly frothy.
  6. Heat a non-stick skillet over medium heat and melt a pat of butter.
  7. Dip each roll-up into the French toast batter, coating all sides quickly but not soaking too long.
  8. Place roll-ups seam side down on the skillet and cook for 2-3 minutes per side until golden brown and cooked through, adding more butter as needed.
