  • 2 large boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (frozen or fresh)
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 4 cups (960 ml) low-sodium chicken broth
  • 4 oz (115 g) cream cheese, softened
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 tablespoons fresh lime juice
  • Salt and pepper to taste
  • 1 large avocado, sliced
  • Handful of tortilla chips, crushed or whole
  • Fresh cilantro, chopped (optional)

Instructions

  1. Finely chop 1 medium onion and mince 3 garlic cloves. Place them in the bottom of the slow cooker.
  2. Add 2 large boneless, skinless chicken breasts on top of the onions and garlic.
  3. Pour in 4 cups low-sodium chicken broth, 1 can diced tomatoes with green chilies, 1 teaspoon ground cumin, 1 teaspoon chili powder, and a pinch of salt and pepper. Stir gently to combine.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender.
  5. Shred the chicken directly in the crockpot using two forks or tongs, then stir to mix evenly.
  6. Stir in 1 can drained and rinsed black beans and 1 cup corn kernels. Cook for another 15-20 minutes to heat through.
  7. Add 4 oz softened cream cheese to the soup, stirring gently until fully melted and incorporated.
  8. Stir in 2 tablespoons fresh lime juice, then taste and adjust salt and pepper as needed.
  9. Ladle soup into bowls and top each with sliced avocado, tortilla chips, and chopped cilantro if desired.

Notes

If cream cheese doesn’t melt smoothly, remove a cup of broth, whisk cream cheese in it until smooth, then return to the pot to avoid lumps. Add extra broth or water if soup is too thick after adding cream cheese. Slice avocado just before serving and squeeze lime juice on slices to prevent browning. Adjust seasoning at the end to avoid over-salting.
