  • 3 ounces (90 ml) cold whole milk or dairy-free alternative (oat or almond milk)
  • 1 ounce (30 ml) lightly whipped heavy cream or coconut cream
  • 1 tablespoon (15 ml) simple syrup (or maple syrup/agave as substitute)
  • 1/4 teaspoon vanilla extract
  • Ice cubes

Instructions

  1. Brew about 2 ounces (60 ml) of fresh espresso and let it cool slightly to room temperature.
  2. Lightly whip 1 ounce (30 ml) of heavy cream until it just starts to thicken but remains pourable.
  3. In a cocktail shaker, combine 1 tablespoon (15 ml) simple syrup and 1/4 teaspoon vanilla extract.
  4. Add the cooled espresso and 3 ounces (90 ml) cold milk or dairy-free alternative to the shaker.
  5. Fill the shaker halfway with ice cubes.
  6. Secure the lid and shake vigorously for 15-20 seconds until well chilled and frothy.
  7. Strain the mixture into a glass, leaving room for the whipped cream layer.
  8. Gently spoon the lightly whipped cream over the top to float like a cloud.
  9. Optionally garnish with a few coffee beans or a dusting of cocoa powder and serve immediately.

Notes

Use fresh espresso for best flavor. Chill milk, cream, and ice before shaking to achieve a frothy texture. Do not overwhip the cream; it should be soft and pourable.
