  • 8 large eggs, room temperature
  • 2 cups whole milk or half-and-half

  • ½ cup sour cream (optional but recommended)
  • 1 cup shredded sharp cheddar or Gruyère cheese (about 100 g)
  • 2 tablespoons everything bagel seasoning, plus extra for sprinkling
  • 2 stalks green onions, thinly sliced
  • 1 tablespoon fresh dill, chopped (optional)
  • Salt and pepper to taste

Instructions

  1. Tear the everything bagels into roughly 1-inch pieces and spread evenly in a greased 9×13-inch baking dish.
  2. In a large bowl, whisk together eggs, milk, cream cheese, and sour cream until smooth. Fold in cream cheese gently with a rubber spatula. Season with 1 tablespoon everything bagel seasoning, salt (lightly), and pepper.
  3. Fold in ¾ cup shredded cheese, green onions, and dill into the custard mixture.
  4. Scatter smoked salmon pieces evenly over the bagels in the baking dish.
  5. Slowly pour the custard mixture over the bagels and salmon, pressing down gently with a spatula to submerge the bagel pieces.
  6. Sprinkle the remaining shredded cheese and 1 tablespoon everything bagel seasoning on top. Optionally add extra green onions for color.
  7. Let the casserole sit at room temperature for 15-20 minutes to allow the bagels to soak up the custard fully.
  8. Preheat oven to 350°F (175°C). Bake uncovered for 40-45 minutes until golden on top and set in the center. Check doneness with a knife or toothpick; it should come out clean.
  9. Let the casserole cool for 10 minutes before slicing to help it hold its shape.

Use day-old bagels for best custard absorption. Letting the casserole rest before baking is key for creamy texture. Tent with foil if top browns too quickly.
