  • 1 whole vanilla bean, split and seeds scraped

  • 2 tablespoons (30 grams) unsalted butter, for greasing

Instructions

  1. Preheat your oven to 350°F (175°C). Butter your 9-inch baking dish generously.
  2. Pit the fresh cherries and spread them evenly in the prepared dish. Optionally toss with a teaspoon of sugar.
  3. In a large bowl, whisk together 3 large eggs and ⅓ cup granulated sugar until pale and slightly fluffy, about 2 minutes.
  4. Split the vanilla bean lengthwise and scrape the seeds into the egg mixture. Stir well.
  5. Sift ½ cup all-purpose flour and a pinch of salt over the egg mixture. Whisk gently to combine.
  6. Gradually add 1 cup whole milk, whisking constantly to form a smooth, thin batter similar to heavy cream consistency.
  7. Pour the batter evenly over the cherries in the baking dish.
  8. Bake for 35-40 minutes until puffed, golden around edges, and just set in the center. A toothpick should come out mostly clean with a few moist crumbs.
  9. Let the clafoutis rest for 10 minutes before serving; it will deflate slightly but remain creamy.
  10. Dust with powdered sugar if desired and slice into squares or wedges.
