  • 1 tablespoon chia seeds or flaxseed meal (optional)

Instructions

  1. Line a baking sheet or tray with parchment paper or a silicone mat.
  2. In a medium mixing bowl, combine Greek yogurt, peanut butter, honey or maple syrup, vanilla extract, and a pinch of sea salt. Mix well using a sturdy spoon or silicone spatula. For a super smooth texture, use an electric hand mixer and beat for 1 minute until creamy and fluffy.
  3. Fold in any optional mix-ins like mini chocolate chips, chopped peanuts, chia seeds, coconut, or berries. Mix just enough to distribute evenly.
  4. Use a small cookie scoop or teaspoon to portion out the mixture into bite-sized mounds (about 1 tablespoon each). Place them onto the lined tray, spaced about 1 inch apart. For perfectly round bites, gently roll each mound with slightly wet hands if needed.
  5. Transfer the tray to the freezer and let the bites chill for at least 2 hours, or until solid.
  6. Once frozen, transfer the bites to a zip-top bag or airtight container. Store in the freezer for up to 2 weeks. Enjoy straight from the freezer or let sit at room temperature for a few minutes for a softer texture.

Notes

Use full-fat Greek yogurt for the creamiest texture. For nut-free or vegan options, substitute sunflower seed butter and coconut yogurt. Double the batch for parties or meal prep.
