  • 12 oz (340 g) penne pasta, cooked al dente
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon crushed red pepper flakes (adjust to taste)
  • 1/3 cup (80 ml) vodka
  • 1 can (28 oz / 796 ml) crushed tomatoes
  • 1 cup (240 ml) heavy cream
  • 1 cup (100 g) freshly grated Parmesan cheese
  • A handful of fresh basil, torn
  • Salt and black pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add 12 oz (340 g) of penne pasta and cook according to package instructions until al dente (about 10-12 minutes). Drain and set aside, reserving ½ cup (120 ml) of pasta water for later.
  2. In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of unsalted butter over medium heat. Once melted and shimmering, add 1 finely chopped small yellow onion. Cook, stirring occasionally, for about 5 minutes until translucent and soft.
  3. Stir in 3 minced garlic cloves and 1 teaspoon crushed red pepper flakes. Cook for about 30 seconds to a minute until fragrant, but don’t let the garlic burn.
  4. Carefully pour in 1/3 cup (80 ml) vodka. Let it simmer and reduce by half, about 3-4 minutes.
  5. Stir in one 28 oz (796 ml) can of crushed tomatoes. Bring to a gentle simmer and cook for 10 minutes, stirring occasionally, until the sauce thickens slightly. Add a splash of reserved pasta water if the sauce is too thick.
  6. Optional: Use an immersion blender to pulse the sauce a few times for a silky texture.
  7. Lower the heat and stir in 1 cup (240 ml) heavy cream. Simmer gently for 5 minutes until the sauce is creamy and rich. Season with salt and black pepper to taste.
  8. Add the cooked penne pasta directly into the sauce. Toss well to coat every piece. Add more pasta water if needed to loosen the sauce.
  9. Plate the pasta and top generously with 1 cup (100 g) freshly grated Parmesan cheese and torn fresh basil leaves. Serve immediately.

Notes

Do not rush the vodka simmer step to mellow the harshness. Add cream off or on very low heat to prevent curdling. Keep reserved pasta water to adjust sauce consistency. Fresh Parmesan and basil add brightness and depth. Use gluten-free pasta or coconut milk for dietary adaptations.
