  • 1 cup (240 ml) milk of choice (coconut, almond, or oat milk recommended)
  • 12 tablespoons maple syrup, adjust to taste
  • ½ teaspoon vanilla extract (optional)
  • ½ cup (120 ml) ice cubes
  • 2 tablespoons toasted coconut flakes (optional)
  • Fresh fruit such as sliced banana or berries (optional)

Instructions

  1. In a mixing bowl, combine rolled oats, ground cinnamon, and chia seeds (if using). Stir well to distribute evenly.
  2. Add milk and vanilla extract (if using) to the dry ingredients and stir thoroughly to combine.
  3. Drizzle maple syrup over the mixture and stir again to sweeten to taste.
  4. Cover the bowl or transfer the mixture into individual glass jars and refrigerate for at least 4 hours or overnight to allow oats to soften and flavors to meld.
  5. Before serving, stir the coconut yogurt to smooth it out; thin with a splash of milk if desired.
  6. Remove the chilled oatmeal from the fridge, add ice cubes, and stir gently to chill and refresh the texture.
  7. Spoon the oatmeal into serving bowls or jars, dollop coconut yogurt on top, and sprinkle with toasted coconut flakes and fresh fruit if desired.
