  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • Salt and freshly ground black pepper (to taste)
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil (extra virgin preferred)
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped (preferably packed in oil)
  • 1 cup heavy cream (or half-and-half for lighter version)
  • 1/2 cup chicken broth (low sodium)
  • 1/2 cup freshly grated Parmesan cheese (Parmigiano-Reggiano recommended)
  • 2 cups fresh baby spinach leaves (packed, rinsed and dried)
  • 1 teaspoon Italian seasoning blend (or dried basil, oregano, thyme mix)
  • 1 tablespoon butter
  • Optional garnish: fresh basil leaves, chopped
  • Optional garnish: extra grated Parmesan

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and smoked paprika.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering (about 2 minutes). Add chicken breasts and cook without moving for 5-6 minutes until golden brown. Flip and cook other side for 4-5 minutes. Remove chicken and set aside.
  3. Reduce heat to medium. Add 1 tablespoon butter to the skillet. Once melted, add minced garlic and cook for 30 seconds until fragrant. Add chopped sun-dried tomatoes and sauté for 2 minutes.
  4. Pour in 1/2 cup chicken broth and stir to deglaze the pan, scraping up browned bits. Add 1 cup heavy cream, 1/2 cup grated Parmesan, and 1 teaspoon Italian seasoning. Stir gently and bring to a simmer. Cook for 3-4 minutes until sauce thickens slightly.
  5. Stir in fresh baby spinach leaves and cook for 1-2 minutes until wilted.
  6. Return chicken breasts to the pan, nestling them into the sauce. Spoon sauce over the top. Cover with lid and cook over low heat for 5-7 minutes until chicken reaches 165°F (74°C).
  7. Taste sauce and adjust seasoning with salt or pepper if needed. If sauce is too thick, stir in a splash of chicken broth or cream.
  8. Serve chicken with plenty of creamy Tuscan sauce spooned over. Garnish with chopped fresh basil and extra Parmesan if desired.

Notes

For even cooking, pound thicker chicken breasts to an even thickness before seasoning. Use room temperature chicken to ensure even cooking. Avoid overcrowding the pan to get a good sear. Use freshly grated Parmesan for better flavor and sauce texture. For dairy-free version, substitute heavy cream with coconut cream and Parmesan with nutritional yeast. Use low sodium chicken broth to control saltiness.
