Instructions

  1. Peel 2 lbs of russet potatoes and cut them into even-sized chunks.
  2. Place the potato chunks in a large pot and cover them with cold, salted water. Bring to a boil and cook for about 15-20 minutes, or until the potatoes are fork-tender.
  3. Drain the cooked potatoes in a colander and let them sit for a few minutes to allow excess moisture to evaporate.
  4. In a small saucepan, gently heat 1/4 cup of heavy cream and 4 tbsp of unsalted butter until just warm.
  5. Transfer the potatoes to a mixing bowl and use a potato masher to mash them until smooth. Avoid overmixing to keep the texture light and fluffy.
  6. Pour the warm butter and cream mixture over the potatoes and gently stir with a wooden spoon. Add 1 tsp of salt and 1/2 tsp of freshly ground black pepper to taste.
