  • 1 tablespoon olive oil
  • 34 cloves garlic, minced
  • 8 ounces mushrooms (cremini or button, sliced)
  • 1 cup heavy cream
  • ½ cup chicken or vegetable broth
  • ½ cup freshly grated Parmesan cheese
  • 12 ounces pasta (fettuccine, spaghetti, or tagliatelle)
  • Salt and freshly cracked black pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente according to package instructions. Reserve 1 cup of pasta water, then drain the rest.
  2. Clean and slice mushrooms. Use a damp paper towel to wipe off any dirt instead of washing them under water.
  3. Heat butter and olive oil in a large skillet over medium heat. Add mushrooms and sauté for 5-7 minutes until golden and softened.
  4. Stir in minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
  5. Pour in heavy cream and chicken or vegetable broth. Stir to combine and let simmer gently for about 5 minutes.
  6. Season with salt and freshly cracked black pepper to taste. Add red pepper flakes if desired.
  7. Stir in freshly grated Parmesan cheese until the sauce thickens slightly.
  8. Toss cooked pasta into the skillet with the sauce. Use reserved pasta water to adjust the consistency as needed.
  9. Garnish with freshly chopped parsley and serve immediately while hot.
