  • 2 cups powdered sugar (sifted if lumpy)
  • 4 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 12 ounces semisweet chocolate chips
  • 1 tablespoon vegetable oil or coconut oil (optional, for chocolate coating)

Instructions

  1. In a large bowl, combine peanut butter, powdered sugar, softened butter, vanilla extract, and salt. Beat with an electric mixer on medium speed until smooth and fluffy, about 10-15 minutes. Add a teaspoon of milk or cream if mixture feels dry.
  2. Cover the bowl with plastic wrap and refrigerate for about 15 minutes to chill the mixture.
  3. Line a baking sheet with parchment paper. Using a tablespoon or small cookie scoop, portion out the peanut butter mixture and roll into 1-inch balls. Place on the parchment-lined tray. Chill the balls in the refrigerator for at least 30 minutes to firm up.
  4. Melt the chocolate chips in a double boiler or microwave in 30-second intervals, stirring between each, until smooth. Stir in vegetable or coconut oil to smooth the chocolate coating.
  5. Remove the peanut butter balls from the fridge. Using a toothpick or fork, dip each ball about three-quarters into the melted chocolate, leaving a small circle of peanut butter visible on top. Tap off excess chocolate and place back on the parchment paper. Reheat chocolate gently if it thickens.
  6. Refrigerate the dipped buckeye balls for at least 1 hour to let the chocolate harden completely before serving.

Notes

Use almond or sunflower seed butter for nut-free version. For dairy-free, substitute butter with vegan margarine or coconut oil. Add a tablespoon of oil to chocolate for a smooth coating. Chill peanut butter balls before dipping to prevent melting. Store in airtight container in fridge up to 2 weeks or freeze up to 3 months.
