  • 2 tablespoons honey (or maple syrup)
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup (120g) trail mix (nuts, seeds, dried fruit, optional dark chocolate chips)
  • Optional: 1 tablespoon chia seeds
  • Optional: 2 tablespoons unsweetened shredded coconut

Instructions

  1. Line a 9×13 inch (23×33 cm) baking sheet with parchment paper, leaving an overhang for easy removal.
  2. In a chilled mixing bowl, whisk together Greek yogurt, honey, cornstarch, and vanilla extract until smooth with no lumps.
  3. Pour the yogurt mixture onto the lined baking sheet and spread evenly to about 1/4-inch (6mm) thickness.
  4. Sprinkle trail mix evenly over the yogurt layer and press lightly to help it stick without crushing the pieces.
  5. Freeze for at least 4 hours, preferably overnight, until firm.
  6. Lift the frozen bark out using the parchment overhang and break into irregular pieces.
  7. Store leftovers in an airtight container in the freezer.

Use full-fat Greek yogurt for best creamy texture and no-melt effect. Whisk cornstarch thoroughly to avoid lumps. Press trail mix gently to keep crunch.
