Creamy One Pot Beef Stroganoff Casserole

This comforting casserole combines ground beef, mushrooms, onions, and egg noodles in a creamy, tangy sauce—all cooked in one pot for easy weeknight cleanup. It’s a modern twist on classic stroganoff, perfect for family dinners or potlucks.

  • 1 lb ground beef (85% lean recommended)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz cremini or white mushrooms, sliced
  • 3 cups beef broth (low sodium preferred)
  • 1 cup sour cream (full-fat or Greek yogurt)
  • 2 tbsp all-purpose flour (or gluten-free blend)
  • 2 tbsp Worcestershire sauce
  • 1 tsp paprika
  • Salt & pepper, to taste (start with 1/2 tsp salt)
  • 12 oz wide egg noodles
  • 2 tbsp unsalted butter
  • Fresh parsley, chopped (for garnish)
  • Optional: 1/2 cup frozen peas
  • Optional: 1/2 cup shredded cheese

Instructions

  1. Heat a large deep skillet or Dutch oven over medium-high. Add ground beef and cook, breaking up with a spoon, until browned and crumbly (5-7 minutes). Drain excess fat if needed.
  2. Add chopped onion and sliced mushrooms. Sauté for 4-5 minutes until onions are soft and mushrooms begin to caramelize. Add minced garlic and cook for 1 minute until fragrant.
  3. Sprinkle flour over the mixture and stir for 1-2 minutes to coat. Add paprika, salt, and pepper. Pour in beef broth and Worcestershire sauce, stirring to combine and scrape up browned bits.
  4. Bring to a gentle boil, then reduce heat to medium-low. Cover and simmer for 5 minutes until sauce thickens slightly.
  5. Stir in egg noodles, ensuring they are mostly submerged. Cover and simmer for 8-10 minutes, stirring occasionally, until noodles are tender.
  6. Remove from heat. Stir in sour cream and unsalted butter. Add peas or cheese if using. Taste and adjust seasoning as needed.
  7. Garnish with chopped parsley and serve hot.

Notes

For gluten-free, use gluten-free noodles and flour. For vegetarian, substitute beef with lentils or plant-based crumbles and use vegetable broth. Add extra veggies like bell peppers or spinach for variety. Sour cream should be stirred in off heat to prevent curdling. Leftovers taste even better the next day and freeze well.
