Instructions

  1. Prep your ingredients: Mince the garlic, zest and juice the lemon, chop the basil, and peel and devein the shrimp if not already done. This should take about 10 minutes.
  2. Heat the pan: Place your large skillet over medium heat and add 1 tablespoon olive oil. Once shimmering, add the shrimp seasoned lightly with salt and pepper. Cook for 1-2 minutes per side until they turn pink and opaque. Don’t overcook! Remove shrimp from the pan and set aside.
  3. Sauté the garlic: In the same pan, reduce heat to medium-low, add the butter, and once melted, toss in the minced garlic and red pepper flakes if using. Sauté for about 30 seconds until fragrant but not browned.
  4. Add liquids and pasta: Pour in the chicken broth, heavy cream, lemon zest, and lemon juice. Bring the mixture to a gentle boil.
  5. Cook the pasta: Add the uncooked pasta to the pan, pressing it down gently to submerge. Stir occasionally to prevent sticking. Simmer uncovered, stirring often, for about 12-15 minutes or until pasta is tender and the sauce has thickened.
  6. Return the shrimp: Once pasta is cooked and sauce creamy, add the shrimp back to the pan. Stir gently to combine and warm through for 1-2 minutes.
  7. Season and finish: Taste and adjust seasoning with salt and pepper. Remove from heat, stir in fresh basil leaves.
  8. Serve: Spoon onto plates and top with freshly grated Parmesan cheese if desired. Enjoy immediately.
