Ingredients

  • Ditalini pasta
  • Ground sausage (mild or spicy, Italian sausage recommended)
  • Chicken broth
  • Heavy cream
  • Onion, diced
  • Garlic, minced
  • Carrots, peeled and diced
  • Celery, chopped
  • Parmesan cheese, grated
  • Olive oil
  • Salt and pepper
  • Dried thyme

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion, garlic, carrots, and celery. Sauté for 5-7 minutes until softened and fragrant.
  2. Add the ground sausage to the pot. Use a wooden spoon to break it apart as it cooks. Stir occasionally until the sausage is browned and cooked through, about 8 minutes.
  3. Stir in the dried thyme, salt, and pepper. Let the spices bloom for about 1 minute.
  4. Add the chicken broth to the pot and bring it to a simmer. Lower the heat and let it cook for 10 minutes to allow the flavors to meld.
  5. In a separate pot, cook the ditalini pasta according to package instructions. Drain and set aside.
  6. Lower the heat to medium-low and stir the heavy cream into the soup. Simmer for 5 minutes, stirring occasionally.
  7. Add the cooked ditalini pasta to the pot and stir well to combine. Let it cook for 2-3 minutes.
  8. Remove the pot from the heat and stir in the grated Parmesan cheese. Taste and adjust seasoning if needed.
  9. Ladle the soup into bowls and serve warm. Garnish with a sprinkle of Parmesan or fresh herbs if desired.
