  • 1/4 cup (25g) unsweetened cocoa powder
  • 1 teaspoon pure vanilla extract
  • 34 tablespoons natural sweetener (erythritol, monk fruit sweetener, or stevia), adjust to taste
  • 1/4 cup (60 ml) unsweetened almond milk
  • A pinch of sea salt
  • Optional toppings: fresh berries, chopped nuts, or shredded coconut

Instructions

  1. Cut the avocados in half, remove the pits, and scoop the flesh into your blender or food processor.
  2. Add the unsweetened cocoa powder, sea salt, and natural sweetener (start with 3 tablespoons).
  3. Pour in the almond milk and vanilla extract.
  4. Blend for 1 to 2 minutes until the mixture is completely creamy, scraping down the sides as needed.
  5. Taste and add more sweetener if desired, then blend briefly again.
  6. Transfer the mousse into serving dishes or ramekins, cover, and refrigerate for at least 30 minutes.
  7. Before serving, garnish with fresh berries, shredded coconut, or chopped nuts.
