A quick and easy appetizer featuring creamy whipped feta spread on toasted baguette slices topped with sweet, caramelized roasted strawberries. Perfect for entertaining and a delightful blend of tangy and sweet flavors.

  • 1/4 cup cream cheese, softened
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 small garlic clove, minced (optional)
  • Freshly ground black pepper, to taste
  • 2 cups fresh strawberries, hulled and halved
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon balsamic vinegar (optional)
  • Pinch of salt
  • 1 baguette or crusty French bread, sliced into 1/2-inch pieces
  • 2 tablespoons olive oil, for brushing
  • Fresh basil or mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a bowl, toss the halved strawberries with honey (or maple syrup), balsamic vinegar if using, and a pinch of salt. Spread them out evenly on one side of the baking sheet. Roast in the oven for 15-20 minutes, stirring halfway through, until softened and slightly caramelized.
  3. Brush both sides of each baguette slice with olive oil. Arrange them on the other side of the baking sheet or on a separate one. Toast for 8-10 minutes, flipping halfway, until golden and crisp.
  4. Place crumbled feta, softened cream cheese, olive oil, lemon juice, and garlic (if using) in a food processor. Blend until smooth and creamy, scraping down the sides as needed. Add freshly ground black pepper to taste.
  5. Spread a generous layer of whipped feta on each toasted baguette slice. Top with a spoonful of warm roasted strawberries, including some of the syrupy juices. Garnish with fresh basil or mint leaves if desired.
  6. Serve immediately warm or at room temperature.

Notes

Use room temperature cream cheese for smooth blending. Do not overcrowd strawberries when roasting to allow caramelization. Use a sturdy baguette for best toasting results. Whip feta while strawberries roast and crostini toast to save time. Store whipped feta covered in fridge up to 3 days. Re-toast crostini before serving leftovers.
