  • 4 ounces (115 grams) cream cheese, softened
  • 1 cup (150 grams) roasted red peppers, drained
  • 2 tablespoons (30 ml) extra virgin olive oil
  • 1 tablespoon (15 ml) fresh lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon fresh herbs (dill or parsley), chopped (optional)
  • Salt and freshly ground black pepper to taste
  • Pita bread, cut into triangles for serving

Instructions

  1. Drain the feta cheese by placing the crumbled feta in a fine mesh sieve and pressing gently to remove excess liquid (about 5 minutes).
  2. Soften the cream cheese by ensuring it is at room temperature or microwaving for 10 seconds without melting (5 minutes).
  3. Prepare the roasted red peppers: if jarred, drain and pat dry; if fresh, roast under broiler or grill until blackened, peel, seed, and chop roughly (10 minutes if roasting fresh).
  4. In a food processor, combine drained feta, softened cream cheese, and olive oil. Pulse until smooth and creamy, scraping down sides as needed (2-3 minutes).
  5. Add lemon juice, garlic, and half the roasted peppers. Pulse until garlic is finely incorporated and peppers are mixed evenly. Taste and add salt and pepper cautiously (1-2 minutes).
  6. Transfer dip to a bowl and gently fold in remaining roasted peppers and fresh herbs with a spatula to keep some texture and color contrast (1 minute).
  7. Cover and refrigerate for at least 30 minutes to let flavors meld. Serving immediately is possible but flavor deepens with resting (30 minutes).
  8. Warm pita triangles in a dry skillet or oven for a few minutes before serving (5 minutes).

Notes

Drain feta well to avoid watery dip. Use cream cheese for smooth texture. Pulse blending to avoid overheating. Adjust salt carefully due to feta’s saltiness. Can substitute cream cheese with Greek yogurt for lighter version or make vegan with tofu and nutritional yeast. Serve chilled or at room temperature. Store in airtight container up to 4 days refrigerated. Not recommended to freeze.
